Fresh Fig Pie

3/4 cup sugar
1/4 tsp. ginger
3 cups peeled, sliced white or black fresh figs
3 tbsp. lemon juice
2 tbsp. butter
Pastry for Crust
Method: Blend sugar and spice, mix with figs, and lemon juice, place mixture in a pastry-lined pie pan. Dot the butter over fruit. Cover with lattice-work strips. Bake in hot oven 425 degrees for 30 minutes.
{Note: if you are using dried figs -- soak, steam or poach to re-plump}
